Ingredients

- Shrimp (225g / approx. 0.5 lbs)
- Eggs (2)
- Cucumber (1)
- Carrot (1)
- Green onion
- Garlic
- (optional) Black wood ear mushroom (50g / 1.76 ounces soaked)
Sauce:
- White pepper
- Salt
- Oil
- Cornstarch
Cooking Instructions
- Base Preparation: Mince the green onion and garlic. Slice the cucumber and carrot. Whisk the eggs until well mixed.
- Sauce Preparation: Combine 1 tablespoon of cornstarch with 8 tablespoons of water and mix it.
- Vegetables: Blanch the sliced cucumber, carrot, and soaked mushrooms in boiling water for a minute. Drain and set aside.
- Eggs: In a heated pan with 2 tablespoons of oil, pour the beaten eggs. Allow them to settle briefly before scrambling them. Remove and set aside.
- Green Union and Shrimp: In the same pan, with an added 2 tablespoons of oil, sauté the garlic and green onion until fragrant. Introduce the shrimp, frying briefly.
- Mix Vegetables: Toss in the blanched vegetables from step 3, stir-frying for about a minute.
- Add Eggs: Add the scrambled eggs back to the pan, mixing well.
- Seasoning: Sprinkle in salt and white pepper, adjusting to taste.
- Final Touch: Drizzle the cornstarch mixture over the contents, stirring well until everything is nicely coated and the sauce thickens.
